As fall approaches and the air gets crisp, you know what that means...
It’s soup season!
Whether you’re cozying up at home or heading to a gathering, a warm, comforting bowl of soup is the perfect go-to.
And speaking of gatherings, how many times have you been asked to bring a dish, and you’re left scrambling for ideas?
We've all been there!
Well, I’ve got just the thing for you...
A delicious tortilla soup recipe that’s not only crowd-pleasing, but also ridiculously easy to make.
We're talking 10 minutes of prep time, tops!
No measuring, no slicing, no extra dishes to wash.
It’s a quick win for any fall occasion or even a quick dinner when you’re short on time.
This soup is a hit every time, and trust me—once you try it, you’ll be making it on repeat.
Here’s what you need:
32 oz Chicken Broth
2 Cups Shredded Chicken from HEAL Farms (Optional- use 1 lb. raw chicken and shred after cooking)
1 Can Spicy Black Beans (strained)
1 Can Pinto Beans (strained)
1 Can Corn (strained)
16 oz Jar of Chunky Salsa
Optional- Salt to taste
Toppings- Cheese, Tortilla Chips, Avocado, and Sour Cream
(I double this recipe for a party)
How to make it:
Put everything in a large pot on medium heat.
Let it simmer 15 min (Or 30 minutes if using raw chicken, then shred once cooked through).
Don’t forget to top with cheese, sour cream and broken tortilla chips before serving.
Bring it to your gathering, and prepare for the compliments to roll in!
Here’s to easy, delicious meals that make you look like a superstar chef!
Happy cooking,
