Here's a quick and easy breakfast recipe my family loves.
I personally like it because it has lots of eggs and very little sugar.
So I can feed it to my kids guilt free PLUS they think they're getting a special treat.

Ingredients:
6 Tablespoons Butter
1 Cup Blueberries (or you can use diced apples)
7 Eggs
1.5 Cups Milk
1 Teaspoon Vanilla
3 Tablespoons Maple Syrup
1.5 Cups Flour (can be gluten free, almond, or coconut) - all give a different texture but they all work.
1 Teaspoon Cinnamon
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
Directions:
Preheat oven to 425 degrees.
Melt butter in 13x9 glass dish in the oven. (I personally use 2 separate smaller dishes because I feel it cooks better that way)
Once melted, add fruit and place back in oven until butter starts to sizzle.
While the fruit is in the oven, mix up the remaining ingredients with an emersion blender (or regular blender).
Pour batter over sizzling fruit and bake in the oven for 20-25 minutes until puffed and golden brown.
Optional- serve topped with whipped cream, syrup and fresh berries. My family eats it plain as it is, but adding the extras does make it even better.
